“Chè” is a Vietnamese term that refers to any traditional Vietnamese sweet beverage, sweet dessert soup, pudding or sweetened porridge. Varieties of “Chè” are made of different types of beans such as mung beans, black-eyed peas, kidney beans or glutinous rice and sweetened with sugar. Other ingredients include jelly, fruit, coconut sauce, aloe vera, lotus seed, etc. Some varieties, such as “Chè xôi nước” may also include dumplings. In Southern Vietnam, Chè are often garnished with coconut crème. Chè is very easy to make and may be made at home.
